You can also insert a text box at the size of the space you have for the sign writing, And centre the text both vertically and horizontally. Note almost all shop names are in ALL CAPITALS. Further to this suggestion, if you create a table in Word with the cells being the width and height of your sign, you can play around with how it looks. Just print it actual size.
